An ideal first course for the summer season, so fast, delicious and you can serve it warm or cold. That's zucchini and shrimps cous cous!
In a few minutes you can realize a complete and easy main course, a cous cous with zucchini, shrimps and cherry tomatoes. A dish that can be suitable to diffrent situations, adding other ingredients (octopus, carrots, corn, mushroom...), and type of cooking (fried, steamed, raw). For example try to vary the recipe steaming all ingredients or grill them without oil, you will get a wonderful light version!
If you don't like shrimps or you are vegetarian or vegan, it's possible change this ingredients with steamed borlotti beans and fried quickly in a pan with a little bit of oil!!!
Ingredients
- 9,9 oz (280 g) of cous cous (2,5 oz (70 g) by portion)
- A big zucchini
- 8,8 oz (250 g) frozen shrimps
- 1 onion
- Some basil leaves (or frozen basil already chopped)
- Extra virgin olive oil
- About 12 cherry tomatoes
- Salt
- Pepper
Preparation
- Boil 280 ml of water and salt. Pour the cous cous, adding 4 spoonfuls of oil and put out the fire.
- Mix well the cous cous, wait a minute until water is assorbed and shell with a fork or spoon.
- Finally chop the onion and cut the zucchini into thin slices.
- In a big pan fry the onion and join the zucchini, add salt and pepper.
- In the meantime put shrimps in a boiling water for a few minutes, strain them and join them to the pan with onion and zucchini.
- Put on the fire for a few minutes so that everything is well cooked.
- In the meantime wash and cut cherry tomatoes and chop finely the basil leaves.
- At the end of cooking join the dressing to cous cous, mix, complete with a little bit of oil and serve.
