In Sicilian, the "marinated masculini" are the best known marinated anchovies, a blue fish found in the Mediterranean Sea very nutritious and loaded with omega 3.
This recipe represents a very famous dish especially in the seaside areas of Sicily. Really simple to prepare, it is served as an appetizer (especially in restaurants) or as a second course with a fresh salad on hot summer days. Quick but very welcome recipe.
The fish is "cold cooked" from lemon juice (there are also those who use vinegar but we do not recommend it) and therefore remains semi raw, soft and tasty. For this reason we recommend a fresh fish bought from your trusted fishmonger.
If you are in Sicily and you want to buy this type of fish from a local fisherman, call them "masculini", I recommend! ?
Ingredients
- Anchovies
- Extra virgin olive oil
- Lemon
- Fresh parsley
- Chopped chili pepper
- Salt
- Garlic
Preparation
- Wash the anchovies and divide them into 2 fillets eliminating the fishbone. If they are very small, you can leave them whole.
- In a deep dish, cover all the halves with lemon juice. Leave about 10 minutes to macerate.
- Drain and arrange on a serving plate. Season with extra virgin olive oil, salt, coarsely chopped parsley, crushed garlic (optional) and a little squeezed lemon juice.
- Serve in the day in order to preserve the freshness of the course.
