Among all the recipes of the Italian panorama, certainly the spaghetti with garlic, oil and chili pepper are one of the simplest, easiest and quickest to make. This does not mean that to have a good result, some rules must be respected.

Surely Siclia is one of the regions that first created this simple dish suitable for any occasion and often the protagonist of "night spaghetti" with friends.

Last minute recipe par excellence, to the question "I have nothing, I don't have time, what do I do for lunch?" there is only one answer "Spaghetti with garlic, oil and chili pepper".

Ingredients

  • 14 oz (400 g) of spaghetti
  • A cup of extra virgin olive oil (100 ml)
  • 2 spicy chillies
  • 2 cloves of garlic
  • Salt to taste
  • A sprig of parsley
  • Parmesan to taste

Preparation

  1. Cook the spaghetti in plenty of salted water and in the meantime heat the oil in a pan.
  2. When it is hot, add the chopped fresh chillies (you can also use dried or already chopped chillies) and the garlic (you can mash it or, if you prefer to have only a background note, leave it whole so that it is easily identifiable and can be removed later).
  3. Stir everything for a few minutes until the garlic has browned. Turn off the heat and remove the garlic (if you left it whole).
  4. Drain the spaghetti al dente and sauté over medium heat for about 1 minute in the pan with the pepper flavored oil.
  5. Finally add a sprig of chopped parsley.
  6. Serve the spaghetti with garlic, oil and hot pepper with a sprinkling of Parmesan.
